Super Hero muffins from the Run Fast Eat Slow cookbook have quickly become one of my families’ favorite recipes. My daughter loves them for breakfast or an afterschool snack. We have decided that ¼ cup of raisins, ¼ cup of chocolate chips, and ½ cup of walnuts are our go to mix-ins. With the added sweetness of the chocolate chips and raisins my daughter does not even complain that the muffin contains a good amount of shredded vegetables. However, I am lucky that I do not have a picky eater in my house.
